Preheat oven to 225*.
Coat one 2-1/2 to 3 lb. rack of baby back ribs evenly with thin layer of olive oil. Sprinkle meat with a quick dry rub mixture of salt, pepper, garlic powder, oregano and brown sugar - all to taste. Distribute rub evenly over both sides. Seal ribs completely in foil.
Place in a large casserole and bake at 225* for at least 3 hours (longer is OK.)
After 3 hrs. remove foil. Work gently because the ribs will be nearly fall-off-the-bone tender. Place ribs on your grill rack directly above the coals or fire. Grill & sear bone side down for three minutes (grill lid off). Turn the rack over and sear the meaty side for 3 minutes.
Move ribs to cooler side of grill & baste with Outta the Park BBQ Sauce. Turn ribs over and baste other side with sauce (meaty side now facing up). Cover grill & cook for another hour at low temperature & smoking with soaked hickory pieces and/or rosemary sprigs (if desired). Check at least once during hour and baste with sauce if needed.
Let ribs rest 10 minutes off the heat and then serve with a side of Outta the Park dipping sauce. Goes great with cole slaw, corn on the cob, potato salad, baked beans and more!
